Convert PDF Data to Excel

I have a set of PDFs that contain purely संख्यात्मक डेटा. Every number in those files needs to land in the correct cell of an Excel workbook so that the sheets are ready for immediate calculation and analysis.
Accuracy is critical here; the figures must match the source without a single digit lost or transposed. Clean column-row alignment is equally important, but apart from that I do not require any elaborate re-formatting. If you spot inconsistencies or obvious scanning errors in the source, flag them so I can confirm the intended value before you proceed.
You may use whatever extraction method suits you best—manual entry, OCR, or a mix—as long as the final spreadsheet is 100 % true to the originals and delivered on schedule in .xlsx format.
