extracting distinct text from 105 pdfs

I have 105 journal articles, each including items from a different scale. This makes about 105 scales.I wish someone to extract the scale items into a google sheet, along with the article name. I estmate someone can comfortably extract 6 to 10 an hour. If the slowest rate is 6 per hour, then that will take 17.5 hours. I will pay for 20. I will supply the articles and the google sheet
