data input into excel sheet

we are currently migrating our ecommerce website from a very old CMS to shopify and need to extract the product information (SKU, title, description, image, category) as well as the category tree from our old website into the excel format that would be suitable to upload into shopify. the old website backend, does not allow us to export this information, so this will either need to be done manually by going through all the items (approx. 1200 items) or using a web data scrapper.
For the right person there is ongoing opportunities to help with the website on an ongoing basis, but for now, this is the job at hand.
This needs to be done urgently, and quickly. so please make sure you understand what needs to be done, before agreeing to a timeline to do this. Ideally this would take at most 1 day to do, however I am open to gradually submitting work over 2 days also.
