Shopify Variants Bulk Overhaul

I'm seeking an experienced Shopify expert to conduct extensive editing of approximately 3000 product variants. This project specifically involves:
There is already a Size variant So we need to add a new Variant that will come before the size it will be named Urgency and shipping
I need a solution on how to do it without editing 3000 products one by one, to do it in bulk automatically.
For the price as well we need to be changed by % for the new variant
I need some one to show me how to do it and also edit it later
