Extracting text from info graphics / mind map and typing in the word doc

I am looking for a freelancer who can extract text from a pdf file containing multiple mind maps. The extracted text should be typed into a Word document. The freelancer does not need to focus on specific areas within the mind maps, but should extract all text available.
