Predict Open Order Sales

I have an Excel spreadsheet that logs every order we take, the date it was opened, and whether it eventually closed or was cancelled. For the orders that are still open, I want a clear, data-driven estimate of the revenue I can realistically expect to realise.
Your task is to take that historical close/cancel information, apply predictive analytics, and return an expected value for every currently open order as well as an overall sales forecast. I am open to whichever modelling approach yields the most reliable results—be that a classic regression, time-to-event survival model, or another technique you recommend—so long as the logic is transparent and reproducible.
Please work directly from the Excel file, document any cleaning steps, and provide the finished model, code or formulas, plus a short explanation of how to refresh the forecast when new data arrives.
