PDF-to-Excel Data Conversion

I have between one and five PDF files that contain a mix of numeric and text fields. I need every record lifted from those PDFs, placed into an Excel workbook, and then lightly processed: simple SUM and AVERAGE formulas should verify column totals and spot-check accuracy.

Clean structure matters as much as correctness. Please organise the sheet logically (headings, consistent data types, no stray spaces) so I can sort, filter, and run further analysis without re-work.

Timeframe: everything must be wrapped up within one week of kickoff.
