Manual PDF Data Entry

I have a collection of scanned PDFs that contain both text and numerical data and I need every character keyed in by hand—no OCR or copy-paste shortcuts. Your task is to open each PDF, read the information carefully, and transfer it into a clean, well-structured spreadsheet (Excel or Google Sheets is fine). Accuracy matters more than speed, so I expect each entry double-checked for typos, transposed digits, or missing fields.

Deliverables:
• A spreadsheet containing all fields from every PDF, laid out exactly as they appear in the scans
• A quick note on any illegible sections so we can resolve them together
