Convert PDF Tables to Excel

I have a PDF made up of text that I need recreated in an editable Excel workbook. Every header, row, and column must carry over exactly so the data can be filtered and analysed straight away. Formatting should stay logical (dates as dates, numbers as numbers, text as text) and any merged cells in the PDF should be handled cleanly rather than copied in as images.
