Write sass (scss syntax) to change colors on an existing template

Starting with this template I bought

I'd like to have a "white" template option beyond a "dark" one.
So need a sass file (or a tree of files if needed) to change text and elements color to dark, backgrounds to white, and adapt all the elements to the new color scheme.
Root of the file will be the rule: " body.layout-white{ .. } "
This is not only about switching font and bg colors which I could do myself, but make the new colors harmonious and suitable for an admin template, for example card borders will be too strong if just switched to black.
