Joomla Modification: Customize Admin Panel Dropdown

Joomla Expert Needed to Modify Product Dropdown List in Admin Panel
I am looking for a Joomla expert to modify the Brand dropdown field in my Joomla admin panel. Currently, the dropdown allows me to select predefined brands (e.g., Gentek, Kaycan), but I want to either:
Remove the dropdown entirely so that the product list only appears under categories without brand separation.
Add a new brand option (e.g., "Roussel Products") to the dropdown.
I do not have experience with phpMyAdmin, MySQL databases, or Joomla field management, so I need someone who can:
✅ Identify where the dropdown values are stored (database or Joomla admin settings).
✅ Make the necessary modifications to remove or adjust the field.
✅ Ensure the update does not break the site's functionality.
