Build a shopify website with wholesale, shop, build a box with over 100 products. al liking off one inventory

i have a Work Press which is far from perfect, needs lots of work I am wanting to move to shopify.
Please bid only if you have experience with customising Shopify plugins and payment integration.

My requirements are
Shop with categories and filters.
Shop also I will sell pre packed gift boxes and using a plug in like https://www.simplebundles.io/ would work well ( yet how will if effect my inventory if I also add a plug in for the build you own gift hampers as discussed below)
6 main menu pages, 12 footer menu pages (1 one whole sale showing wholesale customer some products in the shop yet many more at their reduced price, allowing them to log in , see previous orders, re order, pay for their order etc that the general public can not see) Link to shipping apps, socials.

Landing page has instructions with graphics on how to bundle a gift.
Start building ( button take them to step 1)
Choose a box and write a note to go with gift
They choose a box and a pop up or a section will be there they are add a note (must be visible ) or better they must wrote something to move on. Then a button saying start building.
They are taken to a page which is step 2 they can then choose products as I have over 80 products to choose form I am after this section to have
Category and filters
My ideal lay out would be a thumb nail for each category then they select the category and a list of what is under that category appears etc.
Within categories I also have sub categories, sub categories have variants an example is
Main category Soap
Sub category is signature then there are 12 variants of soaps So 1 soap picture with a drop down of 12 name rose soap, lavender soap etc etc…..
Main category body care
Sub category shower steamers 4 variants to choose from
Sub Category bath soak 4 variants to choose from
Sub category Lip Balms 4 variants to choose from
Main category Mens range
No sub category jus the mens range
Get my drift
If your program can do this how would it effect the shop side of my site as I also sell products on the shop, would they share off the came inventory, or have two inventories etc?
This section is the customer can visually see they items they selected a picture of the thumbnails with a running total on the page?
Once they have selected all the products they wants button saying review and check out.
Step 3 they can review their box, edit if they please, if they are happy they can add to their cart
What would the price and time line for this be please?
