Convert Pilot Logbook Photos to Excel

I need help to transcribe about 87 photos of a pilot logbook into a single Excel spreadsheet. This will involve sorting data into various columns, some of which are text, some numbers, and some dates. The project would involve someone manually entering data from 87 pages into a single consolidated spreadsheet.
I would feel more comfortable providing them with a template to ensure the information is entered accurately, as this is a legal document. However, if the freelancer finds it easier to create the template themselves, that's perfectly acceptable.
Notes:
1. The year is on the top of each page, so instead of making some complicated way of replicating each page, they can just enter 1 date field.
2. There is no need to have totals for each page, the totals should be on the bottom of the spreadsheet as a whole.
