I’m putting together a set of authentic Indonesian main-course recipes that pack plenty of spicy, bold flavour yet stay week-night friendly. I’d like you to curate and write a small collection of dishes—think sambal-rich classics and vibrant stir-fries—that can be prepped and cooked quickly without sacrificing authenticity.

Here’s what I need from you:
• 8–10 recipes centred on Indonesian staples (chicken, seafood, tofu/tempeh, vegetables) that finish in roughly 30 minutes.
• Clear ingredient lists with metric and US measurements, straightforward step-by-step instructions, and estimated prep/cook times.
• Notes on key flavour builders (types of chilli, bumbu basics, coconut milk, kecap manis) plus easy substitutions for ingredients that might be hard to source outside Indonesia.
• A brief cultural or regional snapshot for each dish so the reader understands its roots.
• Final files delivered in an editable Google Doc or Word format.

I’ll test-cook a recipe or two on my end; a dish that hits the promised heat level, fits the time constraint, and tastes unmistakably Indonesian will serve as acceptance criteria.
