Clean Culture Meal Creation for Menu

We are looking for a chef to help guide us in making our menu for our fast casual restaurant. As of right now we are looking to do mixture of asian and hispanic style dishes being served out of a bowl. We are going the organic route and will be providing more options for customers on diets such as keto, vegetarian, vegan, and paleo. I've attached some of our ideas for what kind of bases and ingredients we are considering. We will initially start this business as a ghost kitchen.
