Employee Contract terms and conditions Middle East

I am hiring an employee for sales and business development, i am hiring him on fixed monthly salary plus 10% from net profit on the part of his business. i need some strong terms and conditions that will save my company interest, confidentiality, non competition for 5 years after he resigns in the territory of his operation.
