Combination of Ink (marker) + Surface (stainless steel)

I'm looking for an expert chemist or a similar professional with a background in ink development. The objective is to find or create the right combination of:

Ink (sharpie style marker)
AND
Bare or coated stainless steel surface. Coating options include but are not limited to smooth paint coats and powder paint coats. Other surface options and knowledge would be helpful too.

Our preference is for an ink that can be easily erased with precision (ideally with water or eraser), but at the same time doesn't smudge easily. So far we have tried wet erase markers and oil ink markers (Sharpie) on powder paint coats. We found permanent Sharpies to be far too difficult to remove and required alcohol. Meanwhile the wet erase markers often smudge easily and took too long to dry, erasing the wet erase markers with a wet rubber eraser proved to be a good method of erasing for this ink.

You should possess a deep understanding of the properties and composition of various inks. Your role will include helping us determine the best combination of ink and surface. This will involve trial and error along with detailed analysis and testing.
