Creating maps with essential information, from maps crowded with a lot of details

I use maps that show the geographical position of various airports, cities, towns, or castles in my books.
I created the maps using OpenStreetMap, but there was too much information.
This project is for creating 15 clean maps from the existing ones I attached.
I need a much cleaner map, like the one on "LOMBARDY REFERENCE" attached as an example.
