Technical writer preferably with a mechanical engineering background to write and operational manual

We manufacture a milk texturising machine (patented system and based in Melbourne). The machine is manufactured in Italy. We require 2 manuals - a technical operational manual and a simple shorter manual for unskilled technicians. The manual will also have diagrams/BOM drawings so requires someone with line drawing/system experience. Deadline is mid October 2022
