Sales Forecast Excel Specialist

I'm seeking an excel expert, who has experience building professional sheets, for a sales forecast model for a hospitality group.
What We Need Built
1. Weighted Walk-In Forecasting Model
Forecast walk-ins using the last 4 matching historical days (same weekday + same service).
Apply a weighted recency model (e.g., 40/30/20/10).
Separate models required for Lunch and Dinner.
2. Integration With Bookings
Allow entry of bookings for the selected date (covers and per-head spend).
Bookings should contribute directly to the forecast.
3. Weather Adjustment
Input a single % impact (e.g., -20% for rain).
Weather only affects walk-in estimates.
4. Clean, Organised Workbook
The workbook should include:
Inputs sheet (date, service, bookings, weather)
Historical walk-in log (date, service, walk-ins, per-head spend)
Forecast calculation sheet
Dashboard summarising:
Lunch forecast
Dinner forecast
Daily total
Comparison to last week
Basic trend visuals
Weights sheet (editable weightings)
