EXCEL Pivot table expert to do business analysis

I am looking for assistance in analyzing (developing pivot tables) to compare information/updates between very large workbooks and identify the changes. After the initial workbook was developed there were 5 revisions that during the next 12 months. I can tell by looking at the summary page (by industry sold to and by division that did the manufacturing) there are significant differences between each workbook. Unfortunately, we can't ask the creator of the document directly.
What we need is the ability to drill down and determine what were the specific changes between each workbook.
For instance, each workbook has about 2500 specific products sold to approximately 145 customers over a rolling 15-month period e.g. "the budget". Each quarter, changes were made at the part level to quantity and dollars for actual sales and revision to the budget. The working assumption is that even though the differences at the summary level is significant, that only 5-10% of the 2500 items were manipulated to make this change in the estimates to be sold and we need to identify which ones had significant change by part number and customer.
Once we identify which parts were changed, we will need follow on work to help build charts to communicate these changes to others. this work is being done under the direction of legal counsel and will require the execution of a confidentiality agreement. Time frame is immediate. Once a CA is executed we can share more information for properly scoping and pricing the project.
