To get this right, I need a pastry chef who has hands-on experience formulating bean-to-bar recipes and understands how alternative grains and sugar substitutes behave during tempering and conching.

• Preserve the glossy snap and mouth-feel of premium couverture while dispersing ultra-fine millet flour so the final bar stays unmistakably smooth, never gritty.
• Calibrate monk fruit so the sweetness profile mirrors 60-70 % cacao craft chocolate without any lingering aftertaste.
• Balance roast levels and fruit inclusions so each bite delivers consistent nut and berry distribution, yet remains cleanly tempered at room temperature in tropical climates.
Deliverables I’ll review for approval:
