I need assistance with getting started on Azure document analytics, specifically focusing on PDFs. My main requirement is to create a folder with documents perform text extraction from these PDF documents, analyste them with AI and perform tasks like Chatgpt but protecting the results and keep them inhouse. I prefer the extracted text to be in plain text format.
