n8n Email-to-Excel Automation

I’m looking to replace my manual spreadsheet routine with an end-to-end workflow built in n8n (or a comparable open-source tool). Every time I send a structured Email containing transaction and inventory details, the system should:

• Parse the message and append a clean, timestamped row to a master Excel workbook.
• Update supporting sheets for the journal and general ledger automatically.
• Recalculate and refresh three core reports—Balance Sheet, Income Statement, and Cash Flow Statement—so they’re always current.
