saving data from Esp8266 offline

i am using the ESP8266 Feather Huzzah and ICM20948 sensor: I've successfully implemented sending readings to Thingspeak.
Now, I'm seeking help on how to save the data locally, specifically on my laptop. The issue is that the reading from sensor is receiving slowly to thingspeak that why i want get it locally.
