Simple Arduino Programming Project

Hello -
I have a simple Arduino programming project. The project will convert a highly-complicated ICE gear selector to a simple 5 switch system for an electric car conversion.
There are five, 12 volt switches in the system. If one switch is energized and then when one presses the second switch, the program will turn off the power to the first switch.
All switches are momentary switches, so the Arduino programming has to convert the momentary function to a latching switch function. With this latching programming, the circuit will remain powered until a new function is selected.
I would also like to incorporate LEDs into each switch function without disturbing the ECU (Electronic Control Unit) so one would know which switch is energized by visual reference. The LEDs have been installed into the unit as seen in the attached images. The momentary switches have not been installed yet.
I have never used Arduino, so I also need a recommend as to the best hardware unit to purchase.
If a Freelancer knows a better way to do this, I am open to those thoughts as well.
