IMU sensor reading code + Bluetooth connection

I have an Arduino code that ( establishes a Bluetooth Low Energy (BLE) server on an ESP32 (Huzzah32) microcontroller. It reads data from an Adafruit ICM20948 sensor, including accelerometer and gyroscope information. The sensor data, along with the current time, is formatted and sent via BLE to a connected client device in real-time. This code essentially enables wireless transmission of sensor data from the ESP32 to a receiving device for further processing)
requiremnets :
1- Matlab or python code to have same functions as this code + save the data generated from the Bluetooth device into a file continuously.
2- Make sure the reading from sensor more than 60-100 entries per second
3- Save data in a file ( cvs )
