Arduino(mini or micropro) Live GPS Speed on ssd1306 with time

I would like a small arduino to display on a ssd1306 screen gps live speed data (maybe a neo-6m-0-001) and just because we can do it, the time aside of it. I would like the refresh rate to be as fast as it can be. Maybe 500hz. I'm here because i've tried to do it myself and i cannot achieve it.. First time looking for a coder. I know it's a small project but If it work good i'm looking at two way bigger project.
