Setup multiple Docker websites on AWS EC2

Setup and configure an AWS EC2 instance to host multiple Docker websites.
I want to host multiple websites on a single, low spec EC2 instance. Primary objective is to provide a home for websites at as low a monthly cost as possible. The sites will be very low traffic.
Requirements
1. A suitably configured EC2 instance which hosts the websites
2. Suitably configured Docker installations on the EC2 instance
3. Permanent storage setup for Wordpress websites on AWS
4. Documentation showing how to setup and configure the installation and create additional Docker based Wordpress websites.
5. Zero maintenance on the website. It needs to be setup in a way that needs no attention.
6. DNS solution that ensures that EC2 restarts etc. do not necessitate website DNS changes
Skills needed
AWS EC2 and related technologies, Docker, website IP config, Linux, Wordpress, FTP etc.
What I'll provide
I have an ex developer and have a good working knowledge of AWS areas such as EC2, DNS etc. I'll do the DNS mapping to IP addresses that you provide. However, please see my note on ensuring that EC2 / Docker restarts do not necessitate DNS changes.
Wordpress details
Use latest version of Wordpress. Install Wordfence free edition. Using Wordpress with Docker will necessitate a means of storing data once Docker instances are closed and restarted. You will need to provide an AWS based solution to this.
