Create Highly secured Email Exchange server on EC2 instance with scripts

I want someone to create an EC2 instance and build an email exchange so that I can run multiple domains there.
I want clear instructions on how to install, configure, add multiple domains there. It should be highly secured.

I will pay only after I can follow the document and do the complete setup by myself.
