Catch Incoming Emails using AWS

We have a email sending project and use AWS SES.
When a user submits a form, we send the user an email asking for a reply.
Once the user replies to the same thread, I have to capture that event on my backend. From that event, we need to retrieve the user's email. The content of the email body is not important.
We attempted to use AWS SNS, Topic, and MX, but we have not successfully captured the event yet.
- Required Skills and Qualifications:
Must have knowledge and skills in scripting using Amazon CLI, SES, and SNS.
Experience with Node.js and React is a plus.
