machine learning for categorisation

We're looking for help in developing a categorisation algorithm.
When we make a measurement using our sensor, we get have 128 element array of numerical data. If you plotted the 128 elements as a Line graph in Excel you'd get a smooth curve. There are bumps in the curve which are characteristic on whether the sample was from Category 1, Category 2 etc.
We can provide hundreds of examples of the curve that you get when it's a Category 1, Category 2 etc.
We'd like (ideally C code or something we can compile into a .dll or similar) which can learn from the dataset, then make predictions for future measurements.
Please give us some kind of idea about your experience on similar problems, and which programming languages you could implement a solution in for us.
