quick spreadsheet work

Hello,
how are you? I need some work done on a spreadsheet. I'm going to use airtable so I would rather do it there instead of google sheets or excel. I'd like to do this asap as well.

These are the things I need to have done:
I need to add the appropriate number of options for every one. For instance, the hair has 12 options, but there will be more like 40. That's something that is going to happen for all of them.
Also, I'd like to group some of them together in some way. For instance, I'd like to have a sub for "eyes" instead of a completely separate one as eyes will be a subset of some of the "faces".
I'd like to add a couple more options to the list.
I imagine should only take 30 minutes or a person who is skilled with Airtable
