Business Workflow Automation with Airtable, Zapier & OpenAI

We are looking for an automation expert to support us in building smart and clean automations for a mid-sized manufacturing company (315 employees)
The main tools we want to use are:
Airtable (as a centralized database)
Zapier and/or Make.com (for automation flows)
OpenAI / ChatGPT (to build AI assistants that help with task routing, reporting, and summarizing)
ClickUp or Slack (for internal task and communication management)
? Tasks you will help us with:
Automate employee absence forms (Airtable form → approval → notification)
Automate cost-tracking & production reporting (ERP to Airtable)
Maintenance & machine downtime tracking (form triggers → ClickUp tasks)
Customer service ticket system (form + escalation logic)
AI assistant setup using GPT (auto-routing, summaries, reminders)
? Requirements:
Must have hands-on experience with Airtable, Zapier, and OpenAI
Ability to work modular: deliver one use case at a time
Clean, reliable, low-code/no-code implementation
Bonus if you can explain what you're doing so we can learn in the process
