Airtable Client Pipeline Setup for Tutoring

I'm looking for someone to help me set up a client pipeline in Airtable for a small tutoring business. This person needs to TEACH ME as they set up the table. Note: the table is already somewhat set up, but with limited functionality. This job mostly involves me asking how to improve the functionality, with you instructing me on how to do it, step by step.
Requirements:
- Track client information: Contact details, Payment status, Onboarding tasks with completion dates
- Pipeline stages: Onboarding process, Active client follow-up
- Categorize clients as: New clients
- Must be willing to teach me what they're doing as they're doing it.
