MVP: Email API to AI Dashboard

I'm looking for a skilled developer to create a minimal viable product that integrates Microsoft Office 365 Email API with a dashboard. The goal is to use AI to extract specific data points from email body text and display them in a user-friendly manner. The extracted data should include city and state locations, sender details, and dates and times.

The dashboard should present these data points as individual line items in a card-per-sender view format, with options to check (with no actual function other than visual indication) or delete each item from the card.
Dashboard would need to be live feed of inbound emails to the ingested box.

The emails contain information about which trucks will be available on specific days of the week, along with their locations and the companies (i.e., the email senders) providing them.

We want a dashboard that functions as a simple HUD, displaying only the relevant information for each customer—filtering out the noise and showing when and where their trucks are available.

If a customer hasn’t sent an email, they won’t appear on the HUD at that time. For the MVP, data cleanup will be handled manually by the workers, so there's no need for cron jobs or automated maintenance programming at this stage.
