Email-to-Quote Outlook Automation

I need an AI-driven workflow that sits inside (or alongside) Outlook, watches a dedicated inbox for incoming product inquiries, then does three things automatically:

1. Reads the email and accurately pulls out the product name, requested quantity, any customer contact details, the desired delivery date, and relevant product specifications.
2. Drops those values into my pre-approved quotation template (Word or PDF is fine, the layout is already finalised).
3. Creates a new message in my Outlook Drafts folder that uses our standard reply template, attaches the freshly generated quotation, and leaves everything ready for me to press Send.

Key points you should know
• The source and destination are both Outlook; no Gmail or other clients involved.
• All enquiries are product-based, not service requests or support tickets.
• I’m open to the tech stack: Power Automate, Python, OpenAI, Zapier, or any mix that makes this rock-solid and easy to maintain. Just explain your choice.
• Accuracy in field extraction is critical—if the AI is unsure it should flag the draft for manual review rather than guess.
• The solution must respect our existing folder structure and work with Microsoft 365 security policies.
