AI-Assisted Personal Medical Information Organizer

I'm looking to build a very simple app that allows users to keep their medical information stored locally and have their choice of AI query it and where relevant store it in a calendar. Information will be obtained from local files, database, emails or photos. The initial concept will focus on medical related information, but the app should be able to cope with any range of subjects, the AI will determine what the incoming information relates to and store it appropriately, the user will set up the headline subjects initially (Medical, Insurances, Kids etc.). There will be the concept of security and circles that are allowed access to certain information. There will be a calendar that will store entries recorded from text input, photos (scanned medical appointments sent in the post)

Use Case: Single dad and three kids. Dental appointment comes in for two youngest via email. Email is automatically read by AI and appointment is entered for two youngest in the calendar, the two youngest can see their individual appointments in their own calendar but not their sibling's, dad can see the appointment for both. Appointment comes in for the eldest for an asthma clinic via post. Dad takes a picture of the letter and AI determines what it is, when it is and who it is for. AI then makes an entry in the calendar, the two youngest do not have visibility but Dad and the eldest do. Three weeks later dad types in when is the next dental appointment and AI retrieves the data from the calendar, dad then asks the location and AI retrieves the address from the original photo of the letter sent in the post.
