Want to grow grapes indoors hydroponically. Looking for an agronomist and a wine maker

I would like to build an indoor hydroponic farm that will be able to grow grapes for eating and grapes to make the best wine possible. The grapes will be grown year round and I want to be able to control every aspect of their growth, their taste so that we can also change the composition of the wine. This is a multi year project.
