Vectorize Logos from JPEG/PNG

I need several logos vectorized from JPEG/PNG files. The logos range from simple to moderate detail. Please reach out for specifications. see attached examples. 1 image is of the logo I would like broken down for letter head, and merch/branding. the second photo of a coin is just an example. I prefer the look of the torch behind the V in that example vs the colored photo.

Requirements:
- Convert JPEG/PNG logos to vector format (AI, EPS, etc.)
- Maintain moderate detail accuracy
- Experience with Adobe Illustrator or similar software
- Provide high-resolution final files
