Technical Vector Reconstruction & Brand Asset Package for Boutique Label

I have an AI/EPS logo that came out of a generator. While technically vector, the paths are rough and the colors need a slight adjustment. I need this artwork professionally rebuilt from scratch in Adobe Illustrator.
Scope of Work:
Technical Rebuild: Manually redraw the logo with the Pen Tool. No auto-tracing. Curves must be smooth and mathematically precise.
Typography: The AI text paths must be replaced with a real, high-quality font that matches the aesthetic. Please provide the font name.
Color Correction: Match the design to specific Pantone values (to be provided).
Variations: I need a Horizontal version (primary for website headers), a "Stacked/Vertical" version (for tags/packaging), and a simplified "Icon-only" version (for social media profiles and favicons) plus Solid Black and Solid White (Inverse) versions.
Final Deliverables (Mandatory):
Master Files: Layered AI (Illustrator) and .CDR (CorelDraw - latest version).
Print-Ready: EPS and PDF (CMYK).
Digital/Web: SVG (optimized for web) and high-res PNG (RGB, transparent background).
Brand Card: A one-page hand-off note listing Hex, RGB, and CMYK color codes + Font names used.
