QuickBooks Setup and categorisation

I run a small letting agency and mortgage brokerage business in UK.
I have QuickBooks online which is connected to my bank account and business credit card but the records are not categorised.
There are under 500 transactions between July 2020 to Date on QuickBooks, which i will like to clean up, categorise, invoices/receipts attached to the categorisation and QuickBooks properly set up for VAT.
