Resort Network Configuration with Existing Hardware

I'm looking for a network configuration expert to help set up a robust network for a resort across three buildings using second-hand hardware. The project involves:
- Utilizing existing hardware including a Ubiquiti Edge Router 4, a CISCO CBS350 core switch, and various TP Link 1600 and 2600 layer 2 end switches.
- Choosing the most suitable access points from EAP225, Rujie RG AP820, and potentially Rujie 2200E, with a focus on ease of management and setup.
- Configuring at least three VLANs: one for an IoT system with 2000 microdevices communicating in MQTT, a guest network with a captive portal, and a management network.
- Advising on the connection between switches and inter-building wiring and POE, with a current plan of using Fiber and SFP.
The distance between the buildings is approximately 100-300 meters.
