Kindred Roots Cafe

We are a husband and wife team looking to open a small 1000sq/ft cafe serving hot/cold drinks, baked goods and sandwiches. We are hoping to open ASAP on a shoestring budget. I already have a tentative layout in mind based on plumbing location. The bathroom is a little small for ADA requirements, so we will need to remove a wall and extend it 24-30 inches. I am acquiring all foodservice equipment personally via auctions/websites. The cafe will have a ventless kitchen, utilizing a rapid cook ventless oven and countertop venting unit.
